Metabolomics is a fast growing area of omics research focused on the high-throughput investigation of small molecule metabolites in biological matrices. Therefore, metabolomics is well suited for use in the fields of food science and nutrition. The current limitations of metabolomics are mostly due to technological and database constraints. Significant upgrades in machinery are definitely required for metabolite detection and quantification systems to become more accurate, automated and comprehensive. Critical areas of food science and technology include quality evaluation, intake monitoring, component analysis, physiological supervision in food substitution, authenticity assessment and diet challenge studies. Future applications and developments in metabolomics are the primary focus of this research.
